Resepi Sup Tulang

Bismillah.. Alhamdulillah semasa Raya Qurban yang lepas, kami dapat tulang lembu. Jadi, beberapa hari yang lalu saya masak Sup Tulang. Saya ingin kongsikan 2 resepi menarik yang saya temui semasa mencari (baca: meng'google') resepi sup tulang. :)

SUP TULANG LEMBU

BAHAN-BAHANNYA :-)
1.2 kg tulang lembu yang ada sisa daging
1 pokok daun ketumbar, potong kasar2
1 batang kayu manis
1 kuntum bunga lawang
3 biji buah pelaga
5 kuntum bunga cengkih
2 1/2 inci halia*
5 ulas bawangputih*
1 camca besar bawang goreng*
3/4 camca besar lada hitam*
1 camca besar penuh biji ketumbar*
3/4 camca teh jintn kasar*
3/4 camca teh jintan halus*(*dikisar halus)
Air secukupnya
Garam secukup rasa
Hirisan daun sup, sebagai hiasan
Bawang goreng sebagai hiasan

CARA MEMBUATNYA :-)
Tulang lembu dicuci bersih dan masukkan ke dalam periuk, masukkan kayu manis, bunga cengkih, bunga lawang dan buah pelaga bersama2 bahan kisar halus dan juga daun ketumbar. Kacau rata dan masak hingga mendidih. Kemudian kecilkan api dan renih hingga daging lembut dan mudah ditanggalkan dari tulang (mungkin 1 atau 2 jam). Jika air berkurangan, tambah dengan air panas.
Perasakan dengan garam, dan masak lagi sekejap. Rasa dan jika ok, boleh matikan api. Hidangkan bersama hirisan daun sup dan bawang goreng. Boleh dimakan begitu sahaja atau dihidangkan bersama mee hoon, mee kuning atau nasi impit...
KAEDAH LAIN :- Satukan semua bahan untuk sup dalam periuk tekanan, tuang air sehingga menutupi bahan2 tadi. Tambah garam sedikit, kacau dan masak. Bila periuk bunyi ber"desir", kecil kan api dan masak selama 25 minit. Padamkan api, angkat periuk dan letak dibawah air mengalir sehingga hilang bunyi desiran. Buka dan kalau perlu tambah air sebagai kuah dan juga garam secukup rasa. Hidangkan...
CATATAN MAT GEBU :- Perihal periuk tekanan tu, mungkin anda memiliki periuk tekanan atau pressure cooker yang berlainan teknik memasaknya, jadi gunakan buku panduan yang disediakan pada periuk tekanan masing2 untuk mengelakkan sebarang kejadian yang tidak diingini....

SUP TULANG
resipi asal : K.Nor@SecubitGaram

Bahan:
1 kg tulang lembu (lebih sedap jika digunakan tulang rusuk)
3 biji bawang merah - dimayang halus
1 ulas bawang putih - dimayang halus
2 in halia diketuk
1 rempah sup bunjut@3 sudu besar rempah sup serbuk
1 1/2 sudu besar lada hitam - ditumbuk
3 biji ubi kentang
garam dan gula secukup rasa
1 btg celery jika suka
1 kiub pati ayam
air secukupnya
bawang goreng dan daun sup

bahan penumis :
5 kuntum bunga cengkih
3 biji buah pelaga
1 btg kulit kayu manis
1 kuntum bunga lawang

Cara-cara
Bersihkan tulang dan masukkan kedalam periuk bersama air. Sukatan air mestilah sekali ganda lebih dari paras tulang. Masaklah sehingga daging 1/2 empuk. Jgn buka api terlalu kuat kerana ini akan menyebabkan daging di tulang akan menjadi keras dan liat. Sebaiknya gunakan api yg sederhana shj. Masukkan sedikit garam supaya isi daging menjadi lebih sedap.

Ceduk keluar bhg. berminyak yg terdapat dipermukaan air rebusan tulang tersebut. Biarkan sehingga ia sejuk dan masukkan kedalam peti ais. Akan terdapat satu lapisan membeku dibhg atasnya dan bolehlah dibuang, manakala air rebusan yg dibahagian bawah itu dimasukkan kembali kedalam air rebusan tulang. Kaedah ini dapat menghalang mulut/bibir kita menjadi berminyak setelah makan sup tersebut. Kaedah ini juga boleh digunakan jika hendak memasak gulai tulang..

Masukkan rempah sup bunjut/rempah sup serbuk, halia dan ubi kentang. Bolehlah ditambah air jika kuah kelihatan tidak mencukupi. Masukkan juga serbuk lada hitam dan kiub pati ayam.

Dalam kuali berasingan, panaskan sedikit minyak dan tumislah bahan penumis hingga wangi dan masukkan bawang merah dan bawang putih yg telah dimayang. Goreng sehingga bawang tersebut menjadi garing dan curahkan kesemuanya kedalam periuk rebusan tulang (termasuk minyak).

Masukkan celery jika ada dan masukkan garam dan gula mengikut cita rasa masing2. Masaklah sehingga ubi kentang dan daging empuk. (tulang memang tak leh empuk kan.. hehe)

Hidangkan ke dalam mangkuk dan taburlah bawang goreng dan daun sup.
